Rhubarb pectin, or other pectin, may be protective against SARS CoV-2 spike acting like galectin-3 which is a negative in excess. Milk sugar is protective against the galectin-3 negative effects, also. I bought some powdered Turkey Rhubarb root (mountainroseherbs.com, *unaffiliated) and it makes a flavorful, bitter accent to an entree, about a 1/4 teaspoon per serving sprinkled on at the table or added at the end of cooking. Rhubarb stalk season is spring and earlier summer but may still be available. It can be added to soup instead of using celery.
