Structured coffee recipe
A pot of coffee, jazzed up a bit for better health.
I love coffee but can't tolerate it well, either oxalate or salicylate excess. Making coffee instead of using instant coffee reduces salicylate. Structuring the hot beverage seems to make it more tolerable to my gut even if there is a little oxalate.
I can't find my coffee filters but wanted coffee so I went campfire style - one spoonful gently simmered in a pot with about four cups of water.
Ten to 20 minutes gently heating produced coffee.
Strain your coffee into a large glass jar, 2 quart size, and compost the coffee grounds.
What you add to you hot structured beverage is up to you except the spoonful of MCT oil or ghee (clarified butter) is needed to make it structured.
Coffee is niacin rich so I gave been adding my reduced amount of niacin (50 mg) to my hot beverage in the morning along with a 1)4 teaspoon of potassium bicarbonate to offset the acidity.
I also like a spoonful of stevia and real Vanilla extract. I add a squirt of cannabinoids, THC and CBD, and one of my essential oil blends, the Parasympathetic blend is in the photo, (a simple blend of Lemongrass and Clove) and I add two drops of Myrrh oil.
*Adding liquid trace mineral drops screwed up the chemistry though, it didn’t turn into the creamy texture. Gritty cardamom tended to settle out too. What works well is the edible essential oils which mixes well with the MCT oils, and things like vanilla extract or the Stevia powder which readily dissolve in water. Chaga powder works.
Then blend for 30 seconds. Hot liquids will crack modern day plastic blenders or smoothie makers - lesson learned the hard way, with repetition. So glass jar and a hand blander works good. *However the hand blender to make a puree soup is not very smooth, it makes a ‘Lumpie’ instead of ‘Smoothie’.
Your jar for blending needs to be only half to 3/4 full because the vortex created while blending rises up along the edges of the jar and will spill all over if the jar is too full.
The beverage changes color from black coffee to cappuccino creamy colored. And that is the texture too - creamy.
It made two large mugs of structured coffee for me and it tastes great. A little bit of grit just adds a bit of authentic campfire experience to the morning.
Stevia - I use a fluffy product that can be swapped for sugar on a 1-1 ratio. It dissolves fairly well in hot or cold compared to a different brand. I also like the fluffiness for making a travel mix to have in my purse. I add sodium or potassium bicarbonate with the stevia powder and some cardamom or other powdered herbs for flavor. I could add a little niacin powder too. That mix is handy for adding to take-out coffee or at a restaurant.
